Learn what milks work best for this recipe and why, and then have some hands-on fun as we stretch the curd to create (and then eat!) a deliciously fresh and flavorful warm mozzarella. We’ll also make a quick, fresh ricotta and then combine these two wonderful cheeses into an easy burrata – a tasty stuffed mozzarella treat which you’ll get to enjoy with a glass of perfectly paired wine. Registration is required at www.theartofcheese.com. Join Art of Cheese Instructor Becca Heins, Certified Cheese Professional, in her home kitchen for an afternoon of hands on home cheesemaking. Today’s class will focus on “bloomy rind” cheeses such as Brie & Camembert. These cheeses are best known for their white, bloomy exteriors and rich, creamy centers. And although Brie and Camembert are the most popular in this cheese family, they are just the beginning! In this class we will sample different styles of bloomy rind cheeses, and students will take home a bloomy cheese to ripen and enjoy. You will also learn how to use ash and different aging techniques to make a variety of cheeses from a few simple recipes. An instructional packet with recipes and aging instructions is included.

We’ll also explore Becca’s cheese aging space and discuss tips and aging techniques for this delicious family of cheeses. We’ll wrap up class with a relaxing wine and cheese sampling with some delicious serving ideas. Class size is limited to 6 for a truly personal home cheesemaking experience! Join us for class three of this three-part series (come to one or all three!) where we’ll be moving into several specialized cheeses with a Spanish flair. Special guest Denise Milligan from Spanish Sunday will be co-teaching this class and she’ll share the tips and techniques she’s learned on her travels throughout Spain.

We’ll start with a recipe for Manchego – one of the most beloved Spanish cheeses that uses Sheep’s milk in the make. You can also make this recipe with goat milk, cow milk or a blend and we’ll give you lots of insider tips for sourcing some great local milks.

Denise will also introduce you to some other delicious Spanish Cheese recipes and we’ll sample some homemade cheeses as well as Haystack own award-winning Spanish cheese, Queso de Mano, with a nice glass of wine. Today’s class will focus on pressed cheeses, like the ones we buy in one pound packages at the grocery store. You’ll learn hands on just how easy it is to make cheese at home!

We’ll spend the first part of class in the kitchen, making cheese and getting it into the cheese press. You’ll learn all about home cheesemaking ingredients and equipment. An instructional packet with recipes is included.

Brie & Camembert are in a family we call “Bloomy Rinds” and though they are quite complex and delicious in flavor, they really aren’t all that hard to make! You will learn lots of tips and techniques for aging these cheeses and while you can use a regular refrigerator for your aging, we recommend setting up a wine fridge or a mini fridge as your “cheese cave”. The process of “cheddaring” is unique to this particular cheese and results in fresh, squeaky curds which you can eat fresh or you can press into a wheel and age. Swiss cheeses, also known as Alpine cheeses, are made with a special culture called proprionic shermani, which may or may not produce holes depending on the specific recipe and size of the wheel. You’ll learn about both the “make” (the day you work with the milk) and the “affinage” (the aging) of these cheeses. We’ll teach you how to make a simple cheese press and we recommend that you set up a wine fridge or a mini fridge as your “cheese cave” when you’re ready to try these on your own.
