LONGMONT, Colorado — Located in the heart of Longmont’s Main Street District, Red Cedar Bistro is set to open its doors in Fall 2024, offering a fresh take on Mediterranean flavors. The restaurant promises an intimate dining experience, accentuated by local farm sourced, scratch-made dishes and a curated selection of art.

ABOUT THE RESTAURANT
Red Cedar Bistro combines the culinary expertise of award-winning Executive Chef Larry Shore, with his extensive background in Mediterranean cuisine, and the artistic vision of Sandy Shore, who curates the restaurant’s rotating art exhibitions. Larry’s love for the culinary arts was evident from a very young age, reminiscing, “I want to be a cooker man,” a declaration he made at just six years old.

The bistro’s atmosphere will be crafted with a palette of antique copper, dark woods, and vibrant teals, providing a warm welcome to diners. The menu will feature a range of Tri-Regional Mediterranean-inspired dishes, including options for brunch, lunch, and dinner. Menu Highlights include Classic Gyro on house-made flatbread, Lamb Bolognese with homemade pasta, Catalan Branzino, and the best Sausage and Pepper Sub you’ve ever had! The restaurant also offers an enthusiastic happy hour with great deals on craft cocktails and small plates.

MADE WITH AUTHENTICITY
“Growing up in a family where home cooking was the way of life, I developed a love of scratch-made food, sharing creative food cultures with friends and family,” shares Larry. This foundation in authentic, homemade food is at the heart of what Larry and Sandy envision for Red Cedar Bistro. After years of being unfulfilled by chain-style and fine dining establishments, they aim to provide a better dining experience by offering outstanding food at affordable prices.

INDULGE YOUR PALATE AND YOUR ARTISTIC SOUL
After graduating from Michigan State with a Fine Arts Degree, Sandy pursued a passion for creating and admiring art. “When Larry and I decided to open our first restaurant, we both insisted on supporting talented local artists. I will be curating the artwork to hang, including oil, acrylic, pastel, watercolor, mixed media, marquetry, and more,” says Sandy. Downtown Longmont’s up-and-coming scene was the perfect location to integrate an extensive Mediterranean cuisine with pieces of art from Colorado artists. Diners will be surrounded by a visual tapestry of colors and varieties of mediums that will rotate several times a year and will be available for purchase.
